We have always had a variety of kitchen knives to choose from but lately we have discovered you just need two knives, but they must be of great quality and there are non-better than Japanese knives.

We have a Kai SHUN classic scalloped Santoku 160mm because it was recommended by a chef as an all-purpose knife for slicing, dicing, mincing of vegetables, meat and fish.

There are cheaper versions but once we started using this knife we realised how superior it is not just because of sharpness but also because the cut is so clean. It will soon have a smaller friend. Be careful when first using because it is exceptionally sharp.
